Bathing cassava in CassVita's product creates a coating that "fools the tuber into thinking it's still underground." Local co-ops can create simple infrastructure—metal tanks—that will allow them to extend shelf life to 18 months. Freed from the risk of rot, farmers will grow more and buyers will buy more, creating a positive spiral for smallholders.
